Cookies-n-cream no-bake cheesecake

Yield: 12 servings 

Serving size: 1 medium slice



Cheesecake Filling:

2 + 1/2 cups (460g) cream cheese, softened (room temperature)

1/2 cup powdered erythritol or xylitol  (you can sub half of this out for a few drops of liquid stevia)

1 cup (250ml) heavy whipping cream

1 tbsp. vanilla extract

10 low-carb "oreo" cookies, chopped into small pieces (you can skip the cream filling if you're in a rush, just make 20 chocolate cookie portions)



Chocolate Crust:

4 low-carb "oreo" cookies (you can skip the cream filling if you're in a rush, just make 8 chocolate cookie portions)

2 tbsp. melted butter

2 tbsp. melted sugar-free chocolate (you can sub this out for more butter)

1/4 tsp. salt (omit if using salted butter)





1. Line your 9" circular baking tin / similar container with wax paper or cling wrap (skip this if using a springform pan). To make the crust, place the cookies in a bag and crush by hitting with a wooden spoon or rolling pin (alternatively, place them in a food processor and crush to a chunky crumble).


2. Next, add the melted butter, melted chocolate and salt, mixing well and then pressing it flat in the bottom of your prepared container. Freeze while you make the filling.


3. Beat the cream cheese until fluffy, then slowly incorporate the sweetener, cream, and vanilla. Last, fold in the chopped cookie pieces.


4. Spoon the filling into your prepared pan, tapping the container on a hard surface to pop any large air bubbles inside and help flatten out the surface of the cheesecake.


5. Cover the cheesecake container with a lid or cling wrap and refrigerate 4 hours minimum, ideally overnight to let the cookie chunks soften. Use a hot knife to cut smooth slices when serving.
