FLAVORINGS:

  • 1/4 tsp (1g) salt (omit if using salted butter, cream cheese, or salted nut butter) 

  • 1 tsp (5ml) vanilla extract

 

CRUNCHIES:

  • 1 + 1/4 cup (70g) shredded coconut / OR flaked almonds

  • 1/4 cup (30g) chopped nuts or seeds / OR more shredded coconut

 

 

 

 

1. Melt together the nut butter and your fat of choice over low heat, or in the microwave using shorts 15-second bursts.

 

2. Mix in the chocolate, then heat again over low heat until just melted.

 

3. Next, mix in the vanilla, salt, and sweetener, and lastly add the shredded coconut and chopped nuts. Mix well, then chill in the fridge for 15-30 minutes or until thickened but not yet solid.

 

4. Scoop out into 9 or 10 cookie-shaped portions on a flat surface or in cupcake molds, then freeze until solid. Store in the fridge as these will soften and even melt if left in a warm area.

PB Chocolate Chip: peanut butter + extra fat in place of melted chocolate + chopped chocolate in place of chopped nuts

 

Mint Chocolate Chip: almond butter + extra fat in place of melted chocolate + chopped chocolate in place of chopped nuts + 1/4 tsp. mint flavoring

 

Double Chocolate: almond butter + cocoa powder in place of melted chocolate + chopped chocolate in place of chopped nuts
