moist vanilla cake

Adapted from: http://joepastry.com/2010/chocolate_layer_cake_recipe/

Servings: 8 cupcakes OR 1 small cake

215g water (OR cream)

270g powdered erythritol or xylitol

150g powdered isomalt or sorbitol (OR you could sub this for more erythritol to make it lower-carb, but the cake will not turn out quite as moist)

1 teaspoon salt

170g unsalted butter

1 tsp. guar gum (optional)

480g eggs (8 large eggs, 60g each)

1 teaspoon vanilla extract

215g almond flour

80g coconut flour

1 teaspoon baking powder

1/2 tsp. xanthan gum (optional)

Preheat the oven to 175C/350F.

Butter your baking pan or molds, then dust with a thin layer of coconut flour. (Dump out the excess).

In a large bowl, mix together the water, sweeteners, salt and butter. Melt in the microwave until very warm but not hot (30 seconds).

Let the liquid mixture cool down a bit, then whisk in the guar gum and mix thoroughly.

Next mix in the egg and vanilla until thoroughly combined.

In a separate bowl, mix together the almond flour, coconut flour and baking powder. Sift this mixture over the egg-liquid mixture and mix together thoroughly until fully incorporated.

Divide equally between your baking mold/prepared cake pan and tap a few times on the counter/table to pop any large bubbles.

Bake for 20-25 minutes for cupcakes, 35-40 minutes for a small cake.

Nutrition Info:
Please note that I used MyFitnessPal (a FREE app) to calculate this info, so it may not be 100% accurate, AND I don't think it tracks net carbs, so a portion of the carbs listed may be processed by your body as fiber and NOT actually absorbed as energy.

net carbs = total carbs - dietary fiber (dietary fiber is what makes up about half of most sugar-alcohols, as well as most of the carbs in coconut flour)
