low-carb "Popcorn" Balls

  • 250g mixed nuts (if you want it to look like popcorn balls, use only cream/yellow-colored nuts, skins removed)

  • 1/4 cup (4 tablespoons) salted butter

  • 180g sugar-free marshmallows or homemade

Melt the butter in the microwave, then add the marshmallows and heat again for 15-30 seconds, until the marshmallows have puffed up.

Stir once or twice, then add the mixed nuts and quickly combine until the nuts are coated fully.

Grease your hands, then roll small balls of the mixture and set on non-stick baking paper or mat to set up.

Let sit for 15-30 minutes, then seal in an air-tight container to keep them crisp.
