Serving Size: 1 large cookie

Yield: 7 servings 




  • 1/2 cup (90g) powdered erythritol OR xylitol / Swerve confectioner's sweetener

  • 2 large eggs  (55g each, 110g total out of shell)

  • 1/4 tsp (2g) salt (omit if using salted butter) 

  • 1/4 cup (56g) butter, melted

  • 2 cups (200g) almond flour // OR other nut flour 

  • 2 tsp (g) baking powder

  • 1/2 cup (60g) whole raw almonds (or other nuts)

  • 1 tsp. (5ml) vanilla extract // OR 1/2 tsp. (2.5ml) almond extract

  • (optional) 1 tbsp. (g) citrus zest (about 1 medium orange / 1 large lemon)

  • (optional) 1/2 cup (g) keto-friendly chocolate (click here for DIY keto white chocolate recipe)








1. Preheat the oven to 325F (C). Prep a cookie sheet or equivalent baking pan by lining it with baking paper or a non-stick baking mat.


2. In a large bowl, combine the eggs, sweetener, and salt until the mixture is slightly foamy and has lightened in color (do not whip to thick pate-a-bombe texture). 


3. Next, mix in the vanilla, citrus zest and butter. Once that is incorporated, slowly mix in the baking powder, and then almond flour in two batches.


4. Fold in the nuts and form into a flattened oval on the prepared baking sheet (see video above), then bake for 35-45 minutes or until the edges are golden brown.


5. Let the giant cookie cool at room temperature until just slightly warm, then use a serrated knife to VERY gently slice through the top crust (see video above), then go over those score marks with a straight-edge knife and cut through in one stroke to cleanly cut through the whole nuts inside. Lay each cookie cut-side down flat on the baking sheet and bake at 250F for another 30 minutes, flipping them halfway through.


6. Optionally, after the biscotti have cooled fully to room temperature, dip the bottom edges in keto-friendly chocolate and let harden before storing in an air-tight container at room temperature for up to 1 week.
